Chef Paul Ko brings over 18 years of experience in the art of sushi, guided by precision, restraint, and a deep respect for tradition.

In 2017, he joined Uchi, where he spent seven years refining his craft and rising to the role of head sushi chef. His philosophy is rooted in discipline, balance, and thoughtful execution.

Inspired by his surname, “Ko”, meaning “high” or “elevated,” Sushi Kozy reflects a pursuit of excellence while creating a cozy — intimate, warm, and welcoming — dining atmosphere that feels both relaxed and refined.

Concept

Kaiseki is Japan’s traditional multi-course dining, rooted in seasonality, balance, and artistry.

While omakase means “chef’s choice,” kaiseki adds a seasonal flow — weaving together cooked dishes, raw fish, soups, and small plates.
