Chef Paul Ko leads Sushi Kozy with over 17 years of experience as a sushi chef, bringing warmth, precision, and artistry to every plate
His journey took him to Uchi in 2017, where he spent the last seven years mastering his craft, quickly rising through the ranks to become the head sushi chef.
Inspired by his last name, “Ko,”
Sushi Kozy focuses on creating a cozy and
welcoming dining atmosphere that’s both relaxed and refined.


Concept
Kaiseki is Japan’s traditional multi-course dining, rooted in seasonality, balance, and artistry.
While omakase means “chef’s choice,” kaiseki adds a seasonal flow — weaving together cooked dishes, raw fish, soups, and small plates.
At Sushi Kozy, we honor these traditions while keeping them modern, blending sushi, seasonal flavors, and creative plates into one journey.
